Joel FuhrmanFuhrman’s focus is on health rather than a mixture of health and animal rights which is in contrast to most of the other health professionals listed here. He advocates a vegan diet tending towards raw. This is because he is concerned more with micronutrients then macronutrients (fat, protein, carbohydrate). Again, this is a different emphasis to many others. Dr. Fuhrman has coined the catchword G-BOMBS to summarise his food preferences: Greens, Beans, Onions, Mushrooms, Berries, Seeds.

His Nutritarian concept quantifies Health as being equal to Nutrients/Calories (H=N/C) with his Nutritarian Diet being founded on 4 principles:

  • Nutrient Density (H=N/C)
  • Comprehensive Nutrient Adequacy (recognise and tackle nutrient deficiencies)
  • Favourable Hormone Levels – lower meat consumption to lower IGF-1 and stick to foods which don’t cause insulin spikes
  • Avoidance of Toxins – lower meat consumption to lower exposure to toxins

Meat and dairy is still mentioned in the Fuhrman diet, but the emphasis is on low consumption as expressed in his Nutritarian Food Pyramid (vegetables at the base to be consumed often, tapering to meat and sweets towards the top to be consumed only on rare occasions). The nutrient perspective emphasises the importance of the quality of the soil on what vegetables are grown.
